Butternut Squash Chicken (or Pork) Soup

This Butternut Squash Chicken Soup is a simple and delicious one-dish meal that makes a perfect dinner any day. You can use either chicken or pork for this recipe. Either meat is equally tasty. Although, you can use store-bought broth for your soup recipes to save time, I highly recommend making your own broth. Homemade broth is very simple to make, far more superior in quality comparing to store-bought ones, and much more economy.

You can make a big batch of broth, divide into portions and freeze for later use. You can try my bone broth recipe here. I make a big pot of bone broth once or twice a month and use in soup, stew, stir fry recipes and any recipes that call for liquid. Bone broth has been an ancient healing remedy in the East for a long far before they knew about collagen and calcium.

  • 1/2 kilogram or 1 pounds chicken breasts or pork cubes cut into 1/2-inch cubes
  • 1/2 kilogram or 1 pounds butternut squash cut into 1/2-inch cubes
  • 2 cups green beans cut into 1/2-inch pieces
  • 1 medium leek chopped
  • 1/2 onion chopped
  • 1` teaspoon minced garlic
  • 3 cups broth
  • 2 tablespoons coconut oil
  • 1 teaspoon sea salt or to taste
  • Fresh cracked pepper to taste

  • 1 medium leek chopped
  • 1/2 onion chopped
  • 1` teaspoon minced garlic
  • 3 cups broth
  • 2 tablespoons coconut oil
  • 1 teaspoon sea salt or to taste
  • Fresh cracked pepper to taste
Butternut Squash Chicken Soup
Instructions
  1. In a medium pot, heat the coconut oil over medium-high heat. Add garlic, onion, and leek. Sauté for 30 seconds or until the mixture starts to fragrant.
  2. Add meat to the pot. Season with 1/4 teaspoon of salt. Stir for approximately 3-4 minutes until meat turning white.
  3. Pour broth into the pot. Add bay leaves. Bring the pot to a boil. Reduce heat to medium-low. Cover and let cook for approximately 15 minutes until meat is tender.
  4. Add more salt to the soup. Taste test.
  5. Add green beans and butternut squash to the soup. Cover and continue cooking until green beans and squash are tender, approximately 15-20 minutes.
  6. Serve hot with fresh cracked pepper.
