Granola Date Bars (Gluten-Free, Dairy-Free, Nut-Free, Refined Sugar Free)

These Granola Date Bars are perfect snacks for work and school. This is a fault proof recipe. You can easily make it more or less sweet by adjusting the amount of dates or palm sugar.

You can certainly use normal quick oat instead of gluten-free oat if gluten is not your concern. You can also swap coconut milk for half & half dairy cream if you prefer dairy instead of coconut milk. You can substitute butter with ghee if you want to avoid milk protein completely. The choices are yours to make; experiment and let me know how it turns out!

Ingredients
  • 1 cup date paste or 1 1/2 cups chopped dates
  • 1/2 cup unsweetened cocolut flakes
  • 3/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 cups gluten free quick oats (not instant )
  • 3/4 cup gluten-free all-purpose flour
  • 1/4 teaspoon xan than gum omit if your gluten-free flour mix already contains xan than gum
  • 1/2 cup coconut palm sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 stick (1/2 cup) unsalted butter melted
  • 1/4 teaspoon sea salt
  • 2 tablespoons ground chia & flax blend

Instructions
  1. PREPARE THE FILLING: Heat dates, coconut, and coconut milk in a medium saucepan over medium heat. Stir occasionally until mixture boils and thickens, about 10 minutes. Remove from heat and stir in vanilla. Set aside to cool.

  2. PREPARE THE GRANOLA BASE: Combine oats, flour, sugar, chia & flax blend, baking soda, salt, and cinnamon in medium bowl. Mix well with a spatula. Pour melted butter over dry ingredients and stir until thoroughly moistened.

  3. Reserve about 1/3 cup of granola mix. Press the rest of the granola mixture into bottom of an 8 x 8 inch or 7 x 9 inch baking pan or dish. Place in refrigerator about 30 minutes to harden.

  4. Preheat oven to 350 degree F or 177 degree C.
  5. Spread the cooled date filling evenly over granola base. Sprinkle the remaining 1/3 of granola mixture over the date filling. Gentle press the top granola down. Bake for 25 to 30 minutes or until the granola topping is slightly browned and crisp. Cool to room temperature before cutting into squares.
Recipe Notes

These granola date bars can be stored in air-tight container at room temperature in dry climate for up to 4 days, and would last longer in refrigerator.
